Chocolate cake
25g plain flour
1/2tsp baking powder
1tbsp cocoa powder
25g ground almonds
50g dark chocolate(70% cocoa soilds)
1bsp cold strong black coffee
50g butter
1 large egg,separated
50g sugar
cream & berries,to serve
Preheat oven to 180c/160c fan/gas 4.Grease the inside o two ramekins,then line the bases with baking paper.In a bowl sift together flour,baking powder and cocoa.Stir in almonds and set aside.Melt the chocolate in a bowl over a an o simmering water until chocolate as melted.Add the coffee and butter but don't stir.Whisk the egg white until it forms stiff,glossy peaks.Add the sugar,teaspoon at a time,whisking until stiff after each addition.Stir in chocolate mixture until smooth,then stir in the egg yolk.Gently fold in the egg white and sugar and flour mixture.Turn into the ramekins and bake for 25mins,then turn out and cool before serving with the cream and berries.
Heart biscuits
115g butter
55g caster sugar
few drops of vanilla extract
25g cornflour
250g royal icing sugar
food colouring to decorate
Mix the butter,caster sugar and vanilla extract until evenly mixed.Stir in flour and cornflour.Wrap in clingfilm and chill for 30mins.Roll out to the thickness of a £1 coin and cut out heart shapes.Bake at 180c/160c an/gas 4 for 10mins.Leave to cool.Make the icing sugar with 4tbsp water.Divide into small bowls and add pink and red food colouring.Decorate and serve.
