Tuna & sundried tomato pasta bake

  • 500g dried rigatoni (or any other short pasta)
  • 2 x 400g cans chopped tomatoes
  • 4 thyme sprigs, leaves only
  • 300ml double cream
  • 280g jar sundried tomatoes, drained and quartered
  • 198g can no-added-salt sweetcorn, drained
  • 3 x 120g cans tuna in spring water, drained
  • 100g cheddar, grated
  • 50g parmesan, grated
  1. Heat the grill to its highest setting and put a large saucepan of salted water on to boil. Tip in the pasta and cook for 1 min less than the pack suggests.

  2. Meanwhile, make the sauce by simmering the tomatoes in a pan with a little seasoning and the thyme for about 5 mins. Pour in the cream, stir and simmer for another 4-5 mins.

  3. Drain the pasta, reserving a little of the cooking water, and tip back into the saucepan. Pour over the creamy tomato sauce, the sundried tomatoes, sweetcorn and tuna. Layer into a baking dish (ours was 22 x 29cm), scattering over the grated cheddar between layers. Sprinkle the Parmesan on top and put under the grill for 5 mins until bubbling and golden.

HOMEMADE MACARONI CHEESE

250g macaroni
40g unsalted butter
40g plain flour
568ml semi-skimmed milk
150g mature cheddar cheese,grated,plus extra to sprinkle over
sprig of fresh basil,torn
4 tomatoes,sliced
50g grated parmesan

Cook the macaroni according to pack instructions.Meanwhile,melt the butter in a large saucepan.Stir in the flour and cook for a couple of minutes to form a roux whisk in the milk a little at a time,stirring continuously until it's thick and smooth and has come up to boil.This will take about 10-15 mins.Preheat the grill.Remove the sauce from the hob,stir cheddar cheese until melted and season with salt and pepper.Then add to the cooked macaroni and basil,and mix well.Pour into a deep ovenproof dish.Top with the sliced tomatoes,sprinkle a little cheddar on top,along with the parmesan,and place under a hot grill for about 5-10 mins untill browned on top.Serve.

Easy pasta with tuna and tomato

2tbsp oil
1 onion,chopped
2 cloves garlic,chopped
400g can tomatoes with herbs
1/2 tsp chilli powder
1tsp sugar
500g pack pasta bows
100g can tuna,drained

Heat the oil in a pan,add the onion and cook for a couple of min.Stir in the garlic,tomatoes,chilli,and sugar.Season and bring to the boil.Stir,then reduce the heat and simmer for 5 min.Meanwhile cook the pasta.Flake the tuna into the sauce and heat through.Drain the pasta,return to the pan and add the sauce.Serve with garlic bread.
