Put the flour and a pinch of salt in a large bowl.Make a well in the centre and crack in the eggs, add the milk and the 1tbsp oil and whisk until a smooth batter. If the batter is to thick add a splash of milk. The batter should be the consistency of slightly thick single cream.Heat the frying pan over a moderate heat, then wipe it with oiled kitchen paper.Ladle in some of the mixture and make a thin even layer. After 30 sec the pancake should be ready to flip.Turn out onto a warm plate, and repeat to use up all the batter.Serve with your choose of filling.
