EASY CHICKEN

3 chicken breasts
1/2 red pepper,cut into bite size pieces
1/2 yellow pepper,cut into bite size pieces
1/2 onion,peeled and sliced
4 garlic cloves,sliced
1 carton of passata
what ever herbs you love

In a cassarole dish place the chicken breasts,add on top the peppers,garlic,
onions,herbs and black pepper.Pour over the passata and bake with a lid on for 1 hour
until chicken is cooked.Serve with cous cous.

Apricot fool

Stone and halve a few apricots,then put in a pan with a little water and sugar.
Stew over a low heat until soft.Cool,then drain.Mash the fruit.Whip some double cream.In glasses,alternate layers of apricot mixture and whipped cream,then swirl with a spoon to give a marbled effect.Top with the rest of the cream and some finely crumbled ginger nut biscuits.

Lamb with spiced lentils

4 boneless lamb leg or lamb rump steaks
2tbsp olive oil
1 red onion,finely chopped
2tbsp ground cumin or garam masala
1x 400g can green or brown lentils,rinsed and drained
1 x 400gcan chopped tomatoes
salt and freshly milled black pepper
2tbsp freshly chopped coriander

Heat half oil in a large non-stick pan and cook the onions with the cumin or garam masala for 2-3 mins until soft.Add the lentils and tomatoes.Season and simmer gently for 5-7 mins,stirring occasionally.Remove from heat and stir through the herbs.Meanwhile,heat a non-stick griddle pan,season steaks,rub with remaining oil and cook for 6-8 mins on each side.Arrange the lamb on top of the lentil mix,spoon any remaining meat juices from the pan over the lamb and serve.

Egg and smoked salmon salad

4 eggs
2 x 250g bunches of asparagus
200g frozen broad beans
75g watercress
120g pack smoked salmon trimmings
20g Italian parmigiano reggiano,finely shaved
1/2 tbsp olive oil
zest and juice of 1 lemon
1/2 x 270g pack stonebaked ciabatta,warmed throgh.

Put the eggs in a pan of boiling water and cook for 7 mins,for just-set yolks.Drain,and run under cold water to cool.Peel and cut into quarters.Meanwhile,in another pan of boiling water,cook the asparagus for 2-3 mins,add in the broad beans for the last 30 seconds.Drain and skin the broad beans.On a serving platter,toss the asparagus and beans with the watercress and salmon.Top with the eggs and scatter over the parmesan.Whisk together the oil and lemon zest and juice,season with black pepper and drizzle over.Serve with the warm ciabatta.

Mackerel with teriyaki sauce

1 x 150g jar teriyaki sauce
2.5cm piece root ginger,finely chopped
2 cloves garlic,crushed
455g fresh mackerel fillets

Mix the teriyaki sauce with the ginger and garlic and spread over the mackerel.Cover and marinade for 30 mins in the fridge.Preheat the grill to med.Lay the fillets on the grill pan and cook for 6-8 mins until cooked through and fish flakes easily with a folk.Serve with noodles and stir-fried veg.

Homemade Rice pudding

Preheat oven to 130c,110c fan,gas 2.Put 40g pudding rice,40g sugar and 500ml whole milk into an ovenproof dish.Cook for 30 mins,stir,then sprinkle lightly with grated nutmeg.Cook for another 90 mins until the rice is creamy and skin is brown.

Fruit and nut chocolate brownies

200g fruit and nut milk chocolate
100g unsalted butter
180g self raising flour
2tbsp cocoa powder
225g light brown soft sugar
3 eggs
1tsp vanilla extract

Preheat the oven to 180c,fan 160c,gas 4.Grease 1 20 x 30cm rectangular cake tin and cut a piece of non stick greaseproof and baking paper to line the base of the tin.Break the chocolate bar into chunks and put into a small saucepan with the butter and melt over a gentle heat,stirring every now and then.Take off the heat and leave to cool slightly.Put the flour,cocoa and sugar into a bowl,add the eggs,cooled chocolate and vanilla,and beat together.Spoon into the tin and bake for 15-17 mins (top should be crisp and cooked but inside should be still gooey).Leave brownies to cool in the tin.Once cool,cut into 16 pieces and serve.
